Cranberry Cheesecake Bars

Serves about 32

2 cups all-purpose flour
1-1/2 cups quick-cooking oats, uncooked
3/4 cup light brown sugar
1 cup butter, at room temperature
1 8-ounce package cream cheese
1 14-ounce can sweetened condensed milk
1/4 cup lemon juice
1 teaspoon vanilla extract
1 tablespoon firmly packed light brown sugar
2 tablespoons cornstarch
1 16-ounce can whole berry cranberry sauce

Pre-heat oven to 350 F. Grease a 9 x 13-inch baking pan. In a large mixing bowl combine flour, oats, 3/4 cup brown sugar and butter, mix until crumbly. Reserve 1-1/2 cups of crumbly mixture for the topping. Press remaining mixture into the bottom of the baking pan. Bake 15 minutes, then cool completely.

In a mixing bowl beat the cream cheese until light and fluffy; mix in condensed milk, lemon juice and vanilla until smooth. Pour over crust. In a small bowl combine 1 tablespoon brown sugar with cornstarch and cranberry sauce. Spoon over cream cheese mixture.

Sprinkle reserved crumbly topping over the cranberry mixture. Bake 40 minutes. Let cool; chill before cutting. Store covered in the refrigerator.

Would make this again.
My friend brought these cranberry bars to my ornament exchange this year. She got the recipe from the Nestle Cookie Cookbook she got for Christmas when she was a young girl. I'm made them twice and they are a big crowd pleaser.

Would make this again.
I made these bars for a potluck at work, I had many co-workers say they loved them and requested the recipe. I thought they were great as well. I followed the recipe exactly except that I made my own cranberry sauce from fresh cranberries instead of the canned. Would definitely make these again.
