Cranberry Cheesecake Bars
2 cups all-purpose flour 1-1/2 cups quick-cooking oats, uncooked 3/4 cup light brown sugar 1 cup butter, at room temperature 1 8-ounce package cream cheese 1 14-ounce can sweetened condensed milk 1/4 cup lemon juice 1 teaspoon vanilla extract 1 tablespoon firmly packed light brown sugar 2 tablespoons cornstarch 1 16-ounce can whole berry cranberry sauce
Pre-heat oven to 350 F. Grease a 9 x 13-inch baking pan. In a large mixing bowl combine flour, oats, 3/4 cup brown sugar and butter, mix until crumbly. Reserve 1-1/2 cups of crumbly mixture for the topping. Press remaining mixture into the bottom of the baking pan. Bake 15 minutes, then cool completely. She got the recipe from the Nestle Cookie Cookbook she got for Christmas when she was a young girl. I'm made them twice and they are a big crowd pleaser. Would make this again. I made these bars for a potluck at work, I had many co-workers say they loved them and requested the recipe. I thought they were great as well. I followed the recipe exactly except that I made my own cranberry sauce from fresh cranberries instead of the canned. Would definitely make these again. e
