French Toast Casserole

Make this a day ahead of time and just pop it into the oven the next morning! Great for holiday mornings.

Serves about 8

10 cups cubed sturdy white bread
cooking spray
1 ( 8 oz.) block of reduced fat cream cheese, softened
8 large eggs
1 1/2 cups milk
2/3 cup half-and-half
1/2 cup maple syrup
1/2 teaspoon vanilla
2 tablespoons powdered sugar
Maple syrup

Place bread cubes in a 13 x 9-inch baking dish coated with cooking spray. Beat cream cheese at medium speed of mixer until smooth. Add eggs, 1 at a time, mixing well after each addition. Add milk, half-and-half, 1/2 cup maple syrup, and vanilla - mix until smooth. Pour cream cheese mixture over top of bread; cover and refrigerate overnight. Next morning; Preheat oven to 375. Remove bread mixture from refrigerator; let stand on counter for 30 minutes. Bake for 50 minutes, or until set (should be a nice light golden brown). Remove from oven, sprinkle with powdered sugar and serve with maple syrup.

Would make this again.
I've made this several times for church functions, for Christmas and for a brunch get together. It's delicious! Although after the first time, I started to add frozen strawberries, thawed, which made it taste even better. I highly recommend this recipe to everyone!

Would make this again.
We just had this for breakfast Thanksgiving morning. The whole family enjoyed it, but next time I will probably add cinnamon and nutmeg to the egg/milk mixture and stir in some nuts.

Would make this again.
I made this for Christmas morning with real Vermont maple syrup and cinnamon bread. It was a huge hit and we all have leftovers for later! :) And I can tell you... it's GREAT as a leftover! Definitely going to make this again.
