Grandma Sears' Soft Molasses Creams
1/2 cup solid vegetable shortening 1/2 cup granulated sugar 1 large egg yolk 1 cups molasses 2 teaspoons baking soda 1/2 teaspoon salt 3-1/2 cups all-purpose flour 1 tablespoons ground ginger 1 teaspoon ground nutmeg 1 teaspoon vinegar 1/2 cup boiling water
Preheat oven to 350 F. Cream together shortening and sugar. Add egg yolk and molasses. Stir together baking soda, salt, flour, ginger and nutmeg. Add vinegar to water. Gradually stir flour mixture into shortening mixture, alternating with hot water. Drop by heaping tablespoons onto greased cookie sheet 3" apart. Bake for 8-10 minutes. I'm a huge molassas cookie fan and these are soft and delicious. I replaced the shortening with unsalted butter and used apple cider vinegar. Next time I'm going to use a cookie press for a uniform shape and size. Would make this again. This is a very traditional, yummy, not-to-sweet favorite. I followed the directions to a 'T'for 1/2 of the batter. The second 1/2, I chilled in the fridge, rolled into balls and pressed down with the bottom of a sugared glass. Just an added touch of sweet & perfectly round. Also, this time of the year, my local ice cream place makes pumpkin ice cream. One scoop with a few of these is delightful. e
