Cake made with the Guinness Stout or other dark beer.

1/2 cup butter
1 cup brown sugar
3 egg, beaten
2-1/4 cups self-rising flour
1/2 teaspoon apple pie spice
1 pinch salt
2/3 cup raisins soaked in Guinness
1/2 cup candied peel soaked in Guinness
1 1/3 cups golden raisins soaked Guinness
1/4 cup candied cherries
1 cup Guinness

Preheat oven to 350 F. Grease a deep 8-inch cake pan. Beat the butter and sugar until creamy and the sugar is dissolved; beat in the eggs. Add the flour, salt, apple pie spice and the soaked dried fruit. Mix in the Guinness. Pour in prepared pan and bake for about 2 hours until firm in the center or a cake tester inserted in the middle comes out clean.

Would make this again.
this was very good. I substituted fruitcake fruit for the candied cherries and peel because that is all I could find in my little town. I also put it in a 9x13 pan and baked it an hour. My family asked to just have raisins next time I make it, but everyone at work loved it.
