Irish Cream Cheesecake
2 cups finely crushed vanilla wafer crumbs 5 tablespoons butter, melted For the filling: 3 (8-ounce) packages cream cheese, softened 1-1/2 cups granulated sugar 1 envelope unflavored gelatin 4 large eggs, at room temperature 1/2 cup sour cream 1/2 cup irish cream liqueur 1 teaspoon vanilla grated semi-sweet chocolate, for garnish
Preheat the oven to 300 F. Combine the vanilla wafer crumbs and butter in a small mixing bowl. Press crumb mixture into the bottom and 1-1/2 inches up the sides of a 9-inch springform pan.
